Vegetable Salad Sandwiches

 1 bell pepper
 1 red onion
 1 cucumber
 cabbage
 2 tomatoes
 1 can of olives
 1 avocado
 2 carrots
 lettuce
 fresh basil or cilantro leaves
 6 rolls or 12 slices of bread
 1 recipe Agave Mustard Dressing or Vegan Mayonnaise, optional

Wash all vegetables.

Slice the bell pepper, red onion, cucumber and cabbage very thinly. This is most easily done on a mandolin. Making the vegetables very thin is important for a great sandwich.

Slice tomatoes and olives.

Cut avocado in half. Remove seed and scoop out flesh. Slice.

Shred carrot. This can be done with a peeler, a mandolin or a food processor.

Tear lettuce leaves.

Spread rolls with mayonnaise or Agave Mustard Dressing.

Layer on all your favorite sandwich vegetables.
