
Line a baking sheet with parchment paper or a silicone mat. Preheat oven to 425 degrees.
Prepare grapefruit by cutting the grapefruit in half. To remove each segment, cut along the membrane on the side of each segment and lift the segment from the peel. Alternatively, you can buy grapefruit segments all ready to use.
Line grapefruit segments in a single layer on the prepared baking sheet. Drizzle with maple syrup then sprinkle with ginger and cardamom.
Bake for 30 minutes or until sugars in fruit and maple syrup begin to caramelize.
Serve the roasted ginger grapefruit alone or layered with vanilla coconut milk yogurt and topped with granola.
