Purple Cabbage Slaw with Mandarin Oranges

 ½ head of cabbage
 ½ tsp salt
 4 cups orange segments (about 6 oranges)
 1 tbsp caraway seeds
 2 tbsp pepitas
 10 dried figs

Cut a head of purple cabbage in half. Wash one half of the cabbage with cold water and set aside the other half for another use.

Shred the purple cabbage into thin slices using a mandolin, a food processor or just a very sharp knife.

Place cabbage in a bowl and sprinkle cabbage with the 1/2 teaspoon of salt.

Using your hands, gently massage and press the cabbage leaves. Continue for about 1 minute until cabbage begins to wilt and water pools on the leaves.

Peel oranges, separate them into segments and cut them in halves or thirds.

Cut figs into small pieces.

Toss with caraway seeds, pepitas, dried figs and orange segments.
