Plant based wedge salad with orange peanut dressing

 1 head Iceberg lettuce
 ½ lb broccoli florets
 1 cucumber
 1 cup shredded carrots
 ½ cup peanuts
 ¼ red onion
 1 mango
 4 sprigs of cilantro
 1 recipe Orange Peanut Dressing

From the base of the Iceberg lettuce, cut the lettuce in half. Then cut each half in half to form a wedge.

Cut any large florets into small, bite size pieces. To cut a floret smaller start at the stem and cut the stem in half then pull apart the broccoli top.

Peel cucumber. Slice cucumber into 1/8 inch slices then cut each slice into quarters.

Dice onion in small pieces.

Slice mango flesh off of seed, keeping the knife as close to the seed as possible. Scoop the flesh out of the skin. Dice flesh.

Pull cilantro leaves off stem.

To assemble the salads, place one wedge of Iceberg lettuce on each plate. Sprinkle remaining salad items on top of and around wedge of lettuce.

Serve wedge salad with a generous serving of Orange Peanut Sauce.
