Orange Peanut Sauce

 1 cup peanut butter
 2 cups fresh squeezed orange juice (about 8 oranges)
 1 tbsp fresh ginger root
 2 tsp brown sugar, coconut sugar or date paste
 2 tbsp soy sauce
 3 Thai bird's eye chilis or a pinch of crushed red peppers*
 2 tsp miso**

Add all ingredients to a high speed blender or food processor. Blend until ginger root and chilis are blended.

If you don't have a blender or food processor, dice ginger finely and use crushed red peppers instead of Thai chilis. Mix all ingredients together with a whisk.

*Thai bird's eye chilis are tiny and very spicy. Using 3 chilis gives this recipe a medium spice level. Use just one or two chilis for a more mild sauce. Substitute with crushed red peppers if you can't find Thai chilis.

**Both miso and mirin work well in this recipe. The result is a bit different with each, but both give the umami taste that gives depth to this sauce instead of using traditional fish sauce.
