Maple Glazed Brussels Sprouts with Walnuts

 1 lb Brussels sprouts
 1 tbsp avocado oil
 salt and pepper, to taste
 ½ cup walnuts, roughly chopped
 2 tbsp maple syrup
 squeeze of lime juice

Prepare fresh Brussels sprouts by slicing in half from the stem to the top creating two symmetrical pieces.

Toss them with oil and lay them in a single layer on a baking sheet with the cut side down. Sprinkle with salt.

Roast them at 425 degrees until they are crisp tender and browned on the edges. This may take up to 40 minutes.

While Brussels sprouts are roasting, roughly chop walnuts.

Remove roasted Brussels sprouts from baking sheet and toss with walnuts, maple syrup and lime juice.
