Lemony Hummus

Why this is my favorite hummus: A rich, robust olive oil and fresh squeezed lemon juice give this hummus a beautiful, bright flavor.

 1 can chickpeas (15 ounce)
 2 cloves of garlic
 2 tbsp tahini
 ¼ cup fresh squeezed lemon juice (1 lemon)
 2 tbsp high quality, fruity olive oil

Add all ingredients to a food processor or high speed blender. Process beginning at a slow speed and turning up the speed gradually. Continue until garlic is blended into tiny pieces and hummus is as smooth as desired.

Note: The quality of the olive oil contributes greatly to this recipe; however, the olive oil can be omitted and the lemon juice increased, if desired.
