 12 Roma tomatoes*
 8 green onions, green and white parts
 1 jalapeno
 1 small bunch of cilantro
 juice of 2 limes
 ½ tsp salt
Directions for making fresh salsa in a food processor or Vitamix:

Wash all the produce. Cut the tomatoes into quarters. Roughly chop green onions using both the green and white parts. Remove seeds from jalapeño and roughly chop. Remove stems from the cilantro. Juice the limes.

Add tomatoes, onions, jalapeno, cilantro leaves, lime juice and salt to the food processor and pulse blades a few times. Check to see if all the vegetables are chopped. If not, pulse food processor a few more times.

Directions for making salsa by hand:

Wash all the produce. Dice the tomatoes in a small 1/4 inch dice. Slice green onions very thinly. Chop jalapeño and cilantro very finely. Juice limes. Combine all ingredients.

Notes:

*For best results, use fresh, ripe, in-season Roma tomatoes.

Serve salsa within an hour of making, for best results.

Serve with tortillas chips or on your favorite Mexican food along with Cashew Sour Cream.
