Creamy Dill White Bean Dip

Why I love this dip: I am a dipper! I love dips, dressings, sauces. And I love healthy food. Often dips, dressings and sauces are not healthy, but fat-laden and full of empty calories so it’s a battle between healthy and tasty. Not so with this legume based dip, it is a nutritional superstar and so yummy! Instead of mayonnaise, sour cream or other unhealthy condiments, this dip uses fiber-filled and protein-packed great northern beans as its base. With a fairly neutral flavor profile, they are an excellent elemental ingredient upon which to add in flavor. Fresh dill announces itself prominently with paprika, onion, and chipotle pepper adding a hint of flavor and lots of depth.

Creamy Dill White Bean Dip
Yields12 Servings
Prep Time10 mins
 1 can of great northern beans
 2 or 3 cloves of garlic
 2 tbsp fresh dill
 2 tbsp tahini
 1 tbsp onion powder
 ½ tsp paprika
 ¼ tsp black pepper
 ¼ tsp chipotle pepper
 juice from 1 lemon, about ¼ cup
 2 tsp maple syrup
 2 tsp nutritional yeast
 3 tbsp plant-based milk, or more as needed

Drain the liquid from the great northern beans. Add all ingredients except the milk to a high speed blender or food processor.

Blend until smooth, adding milk as needed.
