Chia Pudding, Mango, and Passion Fruit Parfait

Mango and passion fruit are perfect companions in this chia parfait. Eat it for breakfast, an afternoon snack or dessert.

Chia Pudding
 7 tbsp chia seeds
 1 can coconut milk
 almond milk- fill the coconut milk can with almond milk
 4 tbsp maple syrup
Passion Fruit Puree
 1 cup passion fruit pulp
 1 tsp cornstarch

Make chia pudding at least 4 hours before serving. Whisk together chia seeds, coconut and almond milks, and maple syrup.

Make one recipe of Mango Lime Curd.

In a small saucepan, mix together passion fruit and cornstarch with a whisk. Heat over medium-low temperature until thickened.

Chill all ingredients.

Layer chia pudding, mango lime curd and passion fruit puree in glass dessert dishes.
