Carrot Tahini Dressing

A simple, easy-to-make dressing which is a great universal sauce.

Try it on Baked Italian Brown Rice Falafel, Italian Herb Mini Hasselback Potatoes, or Mediterranean Bowls.

Carrot Tahini Dressing

 ½ cup peeled and shredded carrots
 ½ cup peeled and diced cucumber
 ½ cup tahini
 ¼ cup lemon or lime juice, or more

Prepare cucumber and carrots by peeling and shredding or dicing.

Add carrots, cucumber, tahini and ¼ cup lemon or lime juice to a high speed blender or food processor. Blend until smooth. This may take a minute or two.

Add more lemon or lime juice, to taste and consistency preference.
