Bobotie, a South African favorite, contains milk, eggs and beef. Here is a plant-based version using coconut milk and Beyond Meat Beef. The Beyond Beef has a great, meaty texture and is a tasty addition for occasional use, especially when adapting to a plant-based diet. Don’t skip wrapping it all up in lettuce leaves and topping with almonds because it really finishes the dish.

Dice onion into small pieces.
Add onion and a scoop of the cream from the top of the coconut milk to a medium sauce pan or large skillet and saute over medium heat.
Saute until onions are translucent.
Add remaining coconut milk, Beyond Meat, garlic, salt and all herbs and spices to the onions. Cook for 8 minutes breaking up the Beyond Meat as it cooks.
Cut bread into small cubes and add to the pan along with the kidney beans and golden raisins. Cook for a few more minutes.
Squeeze in the lemon juice. Stir in.
Pull lettuce leaves off of the head. Wash gently in cold water and spin or pat dry.
Serve on lettuce leaves sprinkled with flaked almonds.
