Blueberry Cardamom Lime Smoothie

Why I love this smoothie: Cardamom and lime is one of my favorite flavor combinations. So perfect! I’m always looking for more ways to use it. Paired here with antioxidant and phytonutrient packed blueberries you get a super healthy smoothie that tastes like a dessert. The avocado and coconut milk make this smoothie incredibly creamy and add natural fats so this smoothie is great for getting nutrients into kids and anyone who needs extra calories. For anyone trying to lose weight or keep the weight off this smoothie is better as an occasional treat.

This creamy purple cup of goodness is great any time of day.

Helpful Tips:

Serve it in glasses with a slice of lime on top or lime wedges on the glass for beautifully contrasting color and presentation.

Popsicles instead? This smoothie can also be frozen into really delicious popsicles. I like to keep them on hand for a quick and healthy snack for any of the children who pass through my home whether 2 or 20. Always ready to eat. Always a favorite.

Blueberry Cardamom Lime Lassi

 16 oz frozen blueberries
 1 ½ cups frozen avocado chunks
 2 limes
 1 can of coconut milk
 2 tsp ground cardamom
 ¼ cup maple syrup or agave nectar, optional
 1 can plant-based milk (use the coconut milk can)

Wash the limes. Cut off the ends and discard. Slice limes into quarters.

Add blueberries, avocado, limes, coconut milk, cardamom and maple syrup or agave to a high-speed blender.

Blend for 1-2 minutes until very smooth. Add in the second can of plant-based milk as the smoothie blends. This milk can be an additional can of coconut milk, soy milk, almond milk or other plant-based milk.

The lime will blend into very small chunks giving the smoothie a texture similar to adding coconut. For a smoother smoothie, use lime juice. This will require the use of more limes to get a nice limey flavor.
