Why I love this recipe: French toast is my favorite go-to comfort food. It is one animal-based food that I haven't been able to give up because I love it so much... until now. This recipe keeps the authenticity of traditional egg-based French toast, but is made completely of plant-based foods. The tofu custard substitutes well for the egg custard in texture and taste as well as macronutrient content. Top the French toast with fruit and the balance of protein and carbohydrates makes it a complete meal for breakfast or dinner. Plus, it is so easy to make from pantry staples so I always have a quick meal on hand. Be sure to try the Blueberry French Toast variation at the end of the recipe. It may be even yummier than the original!

Grease an 11 x 17 baking pan with at least 2 inch sides. Preheat the oven to 350 degrees.
Add all the ingredients, except the bread, to a blender. Blend at high speed for about 1 minute.
Slice the baguette into 1 inch-thick slices.
Pour half of the liquid into the baking pan. Lay the slices of baguette in the baking pan squishing in as many slices as possible. Pour the remaining liquid on the baguette slices making sure to cover each slice completely.
Bake at 350 degrees for 45-55 minutes, or until toasty brown.
Blueberry French Toast Variation: To make a super yummy, blueberry-packed French toast omit one package of the silken tofu. Add 1 1/2 cups frozen or fresh blueberries to the blender with the other ingredients. Blend and proceed with the recipe as instructed.
*Black salt contains sulfur and gives the tofu custard an egg-like flavor. It can be omitted, but don't substitute regular salt.
**Don't substitute other plant-based milks. The protein content of the soy milk is important for the success of this recipe.
