Looking for a whole food, plant-based dressing? Try this thick, creamy dressing made from pepitas. Its especially great on Mediterranean Buddah bowls.

½ cup water
¾ cup pepitas
¼ cup olive oil, optional but will make dressing more creamy
2 tbsp lime juice
1 tbsp soy sauce
1 tsp maple syrup
1 tsp chili powder
½ tsp cumin
½ tsp garlic powder
½ tsp onion powder

Place all ingredients in a high speed blender.

Blend on high for 30 seconds or until smooth and creamy.
