Creamy Parsnips with Oranges and Walnuts

 2 lbs parsnips
 ½ tsp salt
 4 tbsp coconut milk
 6 tbsp orange juice
 2 tbsp agave
 12 thin slices of fresh ginger root, peeled
 2 oranges, divided into slices
 4 tbsp walnuts, finely chopped
 nutmeg

Peel parsnips. Slice parsnips into 1/4 inch slices. Add parsnips to steaming basket in a single layer.

Over a pot of boiling water, steam parsnips until tender. This may take up to 20 minutes.

Add slightly cooled parsnips, coconut milk, orange juice, agave and ginger slices to a high speed blender.

Blend until mixture forms a smooth puree.

Divide puree into 4 dishes and serve with orange slices and topped with walnuts and nutmeg.
